Heirloom varieties: unique genetic diversity
Unlike most producing countries, where farms grow selected, cataloged varieties, Ethiopia still grows thousands of uncataloged native varieties, collectively known as "Heirloom". This genetic diversity — considered by many researchers to be the genetic birthplace of the Coffea arabica species — explains why Ethiopian coffees have such varied and complex flavor profiles, even between neighboring farms.
Regions: Sidamo and Yirgacheffe
Sidamo is one of the largest and most established growing regions, at altitudes of 1850-2100m — ideal for slow cherry maturation, which concentrates sugars and flavor complexity. Yirgacheffe, a sub-zone often considered the heart of Ethiopian specialty coffee, grows at similar altitudes (1700-2100m) and is known for the exceptional clarity of its floral and fruit notes.
Processing: washed vs. natural
Both processing traditions coexist in Ethiopia. Washed processing — used for the coffees in this profile — highlights clarity and bright acidity, letting floral and stone-fruit notes dominate the cup without the added sweetness natural processing brings.
